Sunday Roast

One of our favourite meals! It's always very satisfying to see everyone eagerly consuming this in the shortest of time! :)

Roast Chicken and potatoes with Thyme and Rosemary

Healty salad with lettuce, grapes and apple in apple cider and mayonnaise dressing

Me.... all smiles because I feel like a successful wife and mother at that moment...hahaha

It's quite simple! marinate the chicken with salt and pepper for at least 5 hours, more the better.

Then, boil the cut and peeled potatoes, 1 bulb of garlic, 1 lemon in salt water for about 12 minutes then remove. Put the potatoes a side. stab the lemon a few times with a knife and stuff it into the chicken together with the garlic and thyme, coat the chicken with olive oil before putting it to roast. Roast the chicken for about 45 minutes at 190degrees. Meantime, pan fry the potatoes without the oil until you see the potatoes turning slightly brown and leave it aside. Once the chicken is ready, add in rosemary at the base of the tray and mix it with the juice and oil and add the potatoes and coat them nicely with the juice and oil. Roast another 20 to 30 minutes until everything is golden brown. That's it! :)
